Cinnamon, mocha and cocoa, flavours of a very rich and invasive complexity.

Pan-Fried foie gras, lobster fricassee, Guinea fowl in a duo of figs and grapes, duck breast with peaches in a red berry jus, game in blackcurrant sauce.
Fourme of AMBERT, Laguiole, Beaufort, Ossau, Iraty and its black cherry jam, very old Gouda or Parmesan.

Ice creams and pastries with red berries, Raspberry Coulis, plums and chocolate.
